Ingredients

  • 1-2 garlic cloves
  • 1tsp fat (optional)
  • 1 serving dry red lentils
  • 1 serving of vegetables, roughly chopped
  • 300-350g water
  • 1/4 tsp turmeric
  • 1/4 tsp cumin
  • 1 tsp Thermomix vegetable stock paste or good sprinkle of salt

Instructions

  1. Add garlic to mixing bowl and chop.
  2. Add in vegetables and fat (optional) and chop 5 secs/speed 5. Scrape down sides of mixing bowl.
  3. Saute 2mins/Varoma/speed 2. Skip this step if not using fat.
  4. Add in red lentils, water spices and stock or salt and cook 15mins/Varoma/speed 2.
  5. Serve chunky, or blend 1min/speed 10 (increasing speed gradually) until smooth.

Notes

Adjust water volume to suit your preferences. You can make this soup thick and creamy, or add more water to make the texture runnier.


You can also make a quadruple batch of this. Just times all the ingredients by 4 and cook for 25mins (instead of 15).
