Mushroom soup. Great for your hormones

White button mushrooms, when cooked for an hour or more, release substances called “aromatase inhibitors”. This means that it prevents you making extra oestrogen! This is good.

I add chicken pieces and extra broccoli sometimes - so tasty - a great winter meal with a piece of crispy sourdough rye :)

Serves 5

Ingredients

  • 500g mushroom.

  • 500mL filtered water.

  • 1 medium onion, diced.

  • 2 cloves garlic, crushed.

  • 250mL broth of choice or add extra water

  • Salt and pepper to taste.

  • Chicken pieces - I pre-season and air-fry mine

  • Lightly steamed broccoli ~ don’t over-cook or it will go bitter

Method:

  • Blend mushrooms with water until a fluid consistency is reached.

  • Meanwhile, in a heavy fry pan, add the ghee or butter and fry together onion and garlic until glassy and aromatic - add to the mushroom mix.

  • Add the broth and seasoning – cook for 1 hour or more.

  • Re-blend and add chicken and/or broccoli if desired.
