ALEXANDRA’S BERRY-NICE GUMMIES

I use all organic ingredients and you can substitute homey or maple syrup for the sugar

INGREDIENTS:

• 60mL water

• 15 g gelatine

• 25 g sugar (I use raw)

• 50 g Fruit syrup - its really tricky to source good organic syrup - I have some from the organic markets, but that store holder is no longer there - for now I think Ribena is your best bet

• 10 mL lemon juice

METHOD

1. Sprinkle gelatine on the water, whisk vigorously to combine

2. Mix together sugar, water, syrup and lemon juice in a small saucepan – whisk in gelatine and water mixture

3. Heat gently on low heat, all the while stirring to avoid lumps etc. continue until mixture appears glassy and thicker – usually about 10 minutes

4. Immediately pour into silicon chocolate or lolly moulds. Ice cube trays also work really well

5. Pop into refrigerator to set

6. Once set, pop out jellies and store in the fridge in a sealed container.

7. They make brilliant lunch box treats that are very high in protein (from the gelatine), but you MUST give your child an ice brick or they will melt
