Ham, Broccoli and Apple Salad

Delicious and Simple. Great for those of you following your own personalised Metabolic Balance program.

Ingredients

  • 120g ham
  • 1 tbsp ghee or coconut oil
  • 80g Broccoli
  • 50g Carrot
  • 1 apple
  • 1 tbsp balsamic vinegar
  • 1 small clove garlic (optional)
  • 1/2 tsp mustard powder
  • 1/2 tsp sumac optional Salt and pepper
  • 1 slice of rye bread as croutons (optional)

Instructions

Thermomix
  1. Roughly chop/cube ham and add to Thermomix bowl with ghee (optional). Sauté 5min / Varoma / speed 1. Scrape down sides.
  2. Meanwhile, chop broccoli into bite size pieces and slice or grate carrot and apple into julienne strips.
  3. Transfer ham to a bowl and set aside.
  4. Add balsamic, garlic, mustard and sumac into mixing bowl and combine 10 secs/speed 10.
  5. Add all vegetables, apple and ham back into mixing bowl and combine 5 secs/speed 1.
  6. Serve topped with croutons if desired.
Conventional
  1. Roughly chop/cube ham and add to small fry pan with ghee and cook, stirring until lightly browned. Tip from pan and put aside.
  2. Chop broccoli into bite side pieces and slice or grate carrot and apple into julienne strips. Finely chop garlic and mix with balsamic, mustard and sumac.
  3. Combine all ingredients in a bowl to serve. Serve topped with croutons if desired.

Notes

Add other vegetables for the salad as desired.

You can switch the ham for chicken, turkey or smoked chicken. Cute these meats into thin slices and saute until cooked through.
