Ingredients

Dough
  • 80g flour
  • 60g boiling water
  • 1 tsp salt
Lamb Filling
  • 1 garlic clove
  • Handful fresh parsley
  • 4 portions lamb, cubed, partly frozen
  • 1/2 tsp dried chilli flakes
  • 1/2 tsp ground cumin
  • 1/2 tsp ground coriander
  • 1/2 tsp smoked paprika
  • 1 tsp salt
  • ghee or coconut oil for cooking

Instructions

Thermomix
  1. Add flour, water, and salt to the mixing bowl and combine 10 secs/speed 6. The dough will be sticky.
  2. Tip into a bowl and cover with a tea towel to rest.
  3. Add garlic and parsley to mixing bowl and finely chop 5 seconds/speed 10.
  4. Add the diced lamb and all remaining ingredients (except for oil) into the mixing bowl and turbo on 1-second intervals 2-3 times, or until a minced texture is achieved.
  5. Tip dough onto a well-floured bench or ThermoMat. Gently roll into a long rectangle (approx 10cm x 40cm).
  6. Tip mince mixture onto dough and shape into a long sausage shape. Roll the mince in the dough to form a long roll.
  7. Cut the roll into 4 even portions.
  8. Heat a small fry pan on the stove and cook the roll, turning regularly until golden and the inside is cooked. Alternatively, place the roll in the air fryer or over and cook for 10-25 minutes until golden and cooked through.
  9. Serve with vegetables or salad.
  10. The remaining rolls can be frozen raw.
Conventional
  1. Add flour, water, and salt to a mixing bowl and mix until the dough comes together.
  2. Cover with a tea towel to rest.
  3. Add garlic and parsley to a food processor and finely on high speed.
  4. Add the diced lamb and all remaining ingredients (except for oil) into a food processor and combine on high speed until a minced texture is achieved.
  5. Tip dough onto a well-floured bench or. Gently roll into a long rectangle (approx 10cm x 40cm).
  6. Tip mince mixture onto dough and shape into a long sausage shape. Roll the mince in the dough to form a long roll.
  7. Cut the roll into 4 even portions.
  8. Heat a small fry pan on stove and cook the roll, turning regularly until golden and the inside is cooked. Alternatively, place the roll in the air fryer or over and cook for 10-25 minutes until golden and cooked through.
  9. Serve with vegetables or salad.
  10. The remaining rolls can be frozen raw.

Notes

This dish can be made with any raw meat or poultry.

Add different herbs and spices to change the flavor.

The 20g of flour per serving is the equivalent of 2 serves of bread.
